Upgrade docs to latest Docusaurus version. #2269

Noticed I was getting some notices about how Docusaurus should be upgraded while building the website locally, so upgraded it to latest.

It's a bit more strict in some things so had to make some minor changes, and also factor out author information into an authors.yml. I noticed @starkos has updated names on their profile, so I used the new one from their profile/website. Happy to revert to old one if that's your wish.

@tritao I've spoken to @starkos and she doesn't have any objections, I'm not sure if she'll be jumping on to approve the PR though - I'll keep it open for a few more days just in case. This also gives @KyrietS a bit longer to have a look over it, though I'm sure they're happy to see Docusaurus updated.
